In this episode of Active Cooking, Kamali shares her favourite recipe for Spicy Averekai Mushroom Curry.
This Mushroom Curry was initially just a kitchen experiment by Kamali, which, of course, succeeded and became a favourite! Everyone in her home loved the curry. “My elder sisters used to cook in the house, but once they got married, I gradually learnt to cook.” She started with simple dishes and though her first attempts were unsuccessful, she never gave up and kept trying.
Ingredients:
• Oil
• Mustard
• Onion
• Garlic
• Tomatoes
• Averekai
• Mushroom
• Curry leaves
• Green chilies
Take a pan and pour in oil. Once the oil is hot, add in mustard, chilies and curry leaves.
After adding the curry leaves, put in the chopped onions. Once the onion is fully cooked, add in the garlic paste and fry it well.
When a shade of maroon colour begins to emerge, add in the chopped tomatoes.
Add a pinch of salt and close the pan with a lid.
Give it a bit of time, then open the lid and add in the pre-boiled Averekai. Add more water if necessary.
Fry or boil this mixture well and after some time, add mushrooms to it.
Once the mushroom have been added, allow it all to boil. Meanwhile, add some some salt, chilli powder and garam masala and mix well.
Turn off the stove and close with a lid. The curry is ready to be devoured!
